

Walsingham Estate Vineyard - Bacchus Demi-Sec 2023


Tasting Notes:
Dry and fresh, a lovely light wine showcasing aromas of elderflower, gooseberry with biscuity notes and ripe stone fruit.
Food Pairing:
Bacchus Demi-Sec pairs well with a variety of dishes. Its subtle sweetness and fragrant floral notes make it a lovely match for spicy Asian cuisine, such as Thai green curry or Vietnamese spring rolls. It also complements soft cheeses like Brie or Norfolk White Lady, and works beautifully with fruit based desserts. Poached pears, lemon tart, or elderflower and gooseberry pavlova. Ideal for a twist on a classic afternoon tea.
About the Vineyard:
Walsingham Estate Vineyard lies in the Stiffkey Valley, an easy walk to the south of Walsingham, close to the Roman Catholic Shrine at the Slipper Chapel and beside the former railway line which is now the Pilgrim Way. Part of the Walsingham Estate, the field was chosen for the vineyard as it is a gentle south facing slope, with free-draining soil studded with plenty of flint, above the all-important underlying bed of chalk. This same chalk seam runs through south eastern England to Champagne, Chablis and Burgundy.
Walsingham Estate's first sparkling wine, an off dry Bacchus Demi-Sec was produced from hand harvested fruit using the traditional method of secondary fermentation in bottle. Refreshingly light yet fruity, it offers the classic Bacchus aromas and flavours of elderflower, gooseberry and a touch of citrus, with ripe stone fruit flavours and light biscuity notes from ageing on lees.
