Our pheasants are all shot here on the Walsingham Estate. 

Whole pheasants are delicious roasted, casseroled, braised, or even made into a curry. 

Pheasants have a richer, more complex flavour profile than chicken or guinea fowl because they spend their time in the woods and fields, eating a very varied organic diet. 

One pheasant will feed two people as part of a main course, or it can be stretched to feed three, if it’s part of something like a casserole. 

It goes really well with the likes of apple, prunes, or leeks. And in terms of spices: thyme, parsley, and our own oak-smoked garlic work brilliantly.
