Walsingham Estate Mixed Beef & Venison Slow Cook Box

There’s nothing quite like slow cooking when summer gives way to autumn. Beyond the window the leaves are turning while inside, the aromas of delicious sustainably-sourced cuts of meat simmering away fill the kitchen.

Our slow cook box comes with everything from Aberdeen Angus shin, which is perfect for making braised shin stew, to brisket and a haunch of venison, which are just the thing for those long Sunday lunches. When we devised these boxes, we were thinking about great knitwear, excellent bottles of red wine, and people getting together after the summer.

We’ve tried to make these boxes as varied as possible. As well as roasting joints, there are venison sausages, diced venison, and venison mince. These work really well for casseroles as well as slow-cook bolognaise or chilli.

There aren’t many farm shops that can supply native breed beef and wild venison from the same patch of land. But for us it’s all about sustainability as well as a brilliant product – we need to keep the deer down because they damage trees and hedges on the Estate while Aberdeen Angus cattle encourage rare birds like lapwings and redshank onto the meadows.

This mixed box is designed by Patrick Galbraith. Patrick lives locally and helps manage deer, while the Woodhouse family, who have been farming in Walsingham for three generations, have a pedigree herd of Aberdeen Angus cattle.

Each cut in this box comes individually vacuum-packed, labelled and frozen. We blast freeze in the shop for optimum freshness.

Should a particular cut or breed of venison not be available we will substitute it with a similar option or an alternative variety e.g. Muntjac for Roe etc.
