Baron Bigod is a premium Brie-style cheese made on the farm in small batches. It has a nutty, mushroomy rind and a silky golden breakdown that oozes over a fresh, citrussy center. The cheese is made by hand early in the morning using fresh milk at the perfect temperature for cheesemaking. The curds are carefully ladled into large moulds, salted by hand, and aged for up to 8 weeks in a cave-like environment. Baron Bigod is a unique expression of the high-quality milk from Montbeliarde cows and diverse grazing marshland.
