Walsingham Estate Roe Venison is stalked and shot by Patrick Galbraith author, columnist for The Country Life Magazine and friend of the farm shop and Walsingham Estate game keeper Simon Owen. All the venison is processed directly on the estate, ensuring fresh, high-quality meat whilst maintaining the countryside and local habitat.
Roe deer is one of Britain's two native deer species. We cull a small number of them on the Walsingham Estate. The venison is often described as slightly sweet and it has a fine-grained texture. There is a subtle earthiness to roe venison and it can have a herby flavour too, depending on its diet. Of all the venison that’s available in Norfolk, it is probably the closest to beef. It makes for a brilliant venison Wellington.
