The Walsingham Estate is very well regarded for its partridges. 

Partridge is slightly sweeter than pheasant and one bird makes a good serving for a hungry person or it can be stretched to feed two, if it’s part of something like a casserole. 

Partridge pairs really well with bacon, pears and apples, as well as root vegetables and chestnuts. They are perfect for Sunday lunches on cold winter weekends. 

If you’re feeling adventurous, you can make partridge breast into schnitzel and keep the rest of the bird to make stock.
