A day at our Walsingham shop, when we will be celebrating all that’s great about game, with venison butchery demonstrations, suggestions for game cookery and plenty of game available to buy.
We are busy stocking the shop with game soup, game terrine and game ready meals.
12 noon. Children’s Pumpkin Growing Competition: if you took home a pumpkin plant on Open Farm Sunday to grow on at home, this is the day to bring them in for weighing. Bring your pumpkin for weighing at 12 noon.
Followed by Demonstration of Venison Butchery with Julian Stoyal, deer manager at Houghton Hall. We were excited to see Julian and the deer herd at Houghton featured this weekend on the BBC’s Countryfile. In the butchery counter we’ll have plenty of game available to buy.
1pm – 2pm Venison cooking demo
2pm – 3pm Game butchery by our head butcher Scott – preparation of different game birds
3pm – 4pm Game bird cooking demo
Game Cookery demonstrations will be by Sam Bagge. Sam is not only our General Manager but a brilliant chef. He will be demonstrating these delicious recipes:

Sous vide pheasant breast with Norfolk cider, baby leeks and roast potato
Roast partridge, thyme, wild mushroom and parsnip puree
Venison
Venison Burger with beetroot
Venison minute steaks with Binham Blue and redcurrant
